This is one of my favourite ways to eat figs. It’s the perfect balance of flavours and textures.

Serves 4

Ingredients:

4 ripe figs

200gm Finely sliced Prosciutto

200gm Buffalo Mozzarella

80gm Rocket

30ml Balsamic Vinegar

50ml Extra Virgin Olive Oil

Salt and Pepper

Method:

Trim the stalks of the figs and cut them into 3-4 slices.

Break up the buffalo mozzarella into bite sized pieces.

Arrange the fig slices, prosciutto, buffalo mozzarella and rocket on 4 plates.

Dress with the balsamic vinegar and olive oil, and season with salt and cracked black pepper.
